JUPITER, FL – August 2, 2018 - Executive Chef Angelo Arboleda is at the helm of Calaveras Cantina as the restaurant sails through a heated summer proudly serving the coldest, sexiest margaritas in town. With a degree from Florida Culinary Institute, Chef Angelo has been perfecting his passion for food since starting in the industry at the tender age of 17.
“I began my career as a line cook at Cucina del’Arte (now Cucina Palm Beach) under Chef Clayton Carnes. Two years later, I moved on to work at Café Boloud under Chef Jim Leiken. I decided to start a second job around the same time, which turned into my fulltime job at Chez Jean-Pierre Bistro under Chef\Owner Jean Pierre,” he says. After that, Chef Angelo opened The Woods Jupiter in the summer of 2015 as the Sous Chef under before joining the dynamic team at Calaveras Cantina.
“Chef Angelo is incredibly talented, and Calaveras Cantina is thrilled to have his leadership now,” says Owner Curtis Peery, a.k.a “El Presidente,” a fifth generation native Floridian who was born in Miami and raised in Palm Beach Gardens.
Chef Angelo says he’s always cooked at home and therefore gravitated naturally towards a culinary career. “I especially love cooking slow-roasted meats and fresh fish, and handmaking pastas, artisanal breads, preserves, cures, ferments and pickles. I always want to keep things fresh and exciting!”
With the restaurant’s presentation of delicious items and more of a craft-taco approach to its new menu, he’s excited for guests to visit. “For brunch, we’ve developed a few great recipes and ideas, such as our egg benedicts served over arepas instead of the usual English muffin as well as a guava and mascarpone stuffed French toast.”
Just like there is a place for everything in the kitchen, Chef Angelo says life must also be organized with everything in place in order to have balance. Culinary icon Thomas Keller, who inspires excellence in young professionals and is dedicated to preserving the traditions and quality of cuisine in the United States, is who he considers his chef idol.
Located at 125 Dockside Drive along the beautiful Intracoastal Waterway, Calaveras Cantina is open from 11:30 a.m. until midnight Monday through Thursday and until 1:30 a.m. on Fridays and Saturdays. Brunch is served from 10 a.m. to 2 p.m. on weekends with live music until 3 p.m. Indoor and open-air seating areas offer lots of space to relax. Street, garage and valet parking is available. Happy Hour is daily from 4 to 7 p.m. with a second Late Night Happy Hour from 10 p.m. until close (full menu served until 11 p.m.).
